Leberknödelsuppe—Liver Dumpling Soup

This soup is a specialty in Bavaria where it can be ordered in most restaurants. During the war, we were able to get double the amount of meat our ration coupons called for if we bought “organ meat.” This nourishing soup helped stretch our ration stamps.

For the dumplings:

1 package stale rolls (I use Earth Grain French)

1½ cup warm milk

1/2 pound beef liver, chopped fine, membranes removed

1 finely chopped onion, sautéed

1/2 cup chopped fresh parsley

2 eggs

2 teaspoons dried marjoram

Dash garlic salt

Grated rind of one-half lemon

1 teaspooon salt

1/2 teaspoon pepper
